Here is how it works. Every restaurant we feature is scored independently across six dimensions that actually matter: where the ingredients come from, whether the menu follows the seasons, how waste and packaging are handled, how animal products are sourced, what the restaurant gives back to its community, and how central vegetables are to the kitchen's identity.
The SEERO scale (Starting, Engaged, Endorsed, Recognised, Outstanding) condenses that scoring into a single Impact score from 1 to 5 you can scan in a second.
Starting: first credible signs of responsible practice. The restaurant is on the path, but the evidence base is thin.
Engaged: on the agenda across multiple covered dimensions, but practice is still developing or partly unverified.
Endorsed: a solid profile across at least three dimensions, supported by independent or corroborated evidence.
Recognised: strong, demonstrably consistent practice across the majority of dimensions.
Outstanding: a defining principle of the restaurant, validated across all SEERO dimensions, and requiring a current, recognised third-party certification.
We score conservatively. A restaurant saying we care about the planet earns nothing on its own: we look for named suppliers, real certifications and corroborating evidence, not adjectives. When the evidence is thin, so is the score.
