The delicious details

Focus Foodbar opened on Tilburg's Heuvelstraat in 2019 as the city's first and only fully plant based restaurant. Owner Bregje Mols spent her working life in hospitality before founding it, and describes the place as a restaurant that simply happens to cook with plants.

The room is filled with more than a hundred plants and the register stays deliberately low barrier: lunch, coffee, dinner and drinks rather than a tasting counter.

What reaches the plate changes through the year. Seasonal produce and surplus ingredient streams decide what the kitchen cooks, so dishes are rarely repeated exactly. Oyster mushroom bitterballen, risotto and panko croquettes and vegetable led mains sit alongside a bar pouring beer, wine and cocktails.

Menu
What's on the table, and what's left off

Focus Foodbar serves an entirely plant-based menu with no meat, fish, dairy or eggs. Vegetables carry every dish: oyster mushroom bitterballen, celeriac purée with fried mushrooms, risotto croquettes and seasonal mains draw on Asian, Middle Eastern and Dutch traditions. The selection changes through the year, shaped by seasonal produce and surplus ingredient streams.

Everything Focus Foodbar serves is plant-based, so no meat, fish, dairy or egg enters the kitchen. The whole card is therefore suitable for vegan and vegetarian guests, and free of dairy throughout.

Vegetables carry the dishes rather than sitting beside them: oyster mushroom bitterballen, cauliflower, celeriac purée with fried oyster mushrooms, risotto and panko croquettes.

The cooking draws on several kitchens at once, with Asian-influenced sandwiches, a Middle Eastern salad and Dutch bar snacks on the same menu. Seasonal produce and surplus ingredients set what is available, so the selection moves with the year.

How this restaurant rates
4 - Recognised

The menu follows the seasons rather than a fixed card: seasonal produce and surplus ingredient streams determine what the kitchen cooks, so dishes are rarely repeated exactly. That same approach extends to its waste record.

The restaurant runs an active Too Good To Go surprise-bag programme for food left at the end of service, and states that more than 20,000 kilos of food have been saved from waste since it opened. Because the kitchen is entirely plant-based, no meat, fish or seafood is sourced at all.

Plants are the whole of the menu rather than a section of it, and vegetables lead the dishes themselves. The Vegetariersbond has awarded Focus Foodbar its Lekker Vega Gold label, which recognises a fully vegetarian menu; the restaurant's own card goes further and is entirely vegan.

De Bosboerderij, a syntropic forest farm, named as partner for anniversary dinners; routine local sourcing not detailed.

The restaurant states its dishes are made in-house with fresh, local ingredients, and several Tilburg listings repeat that positioning, but no routine supplier is named for any ingredient category.

One specific producer is named: De Bosboerderij, a syntropic forest farm, for its seven-course anniversary dinners in August and September 2026. That is a traceable partnership with genuine producer proximity, but it is framed as a special-dinner collaboration rather than routine supply.

Menu rotation driven by seasonal produce and surplus ingredient streams; stated as core model, no archived menus to verify frequency.

Seasonality is the stated operating model: the restaurant states that dishes are never exactly the same because seasonal products, surplus streams and creativity determine what appears on the plate. Independent Tilburg listings carry the same description. That is a specific, named mechanism for menu rotation communicated as a guiding principle.

Active Too Good To Go surplus-food programme; menu built around surplus ingredient streams; 20,000+ kilos of food saved since opening.

Food waste reduction is this kitchen's strongest evidenced practice. Focus Foodbar runs an active Too Good To Go surprise-bag programme, confirmed by a live store page, and builds its menu around surplus ingredient streams as standard practice. The restaurant states that more than 20,000 kilos of food have been saved from waste since opening in 2019.

Fully plant-based menu with no meat, fish, poultry or seafood; independently confirmed by Vegetariersbond Lekker Vega Gold label.

Focus Foodbar serves a fully plant-based menu with no meat, poultry, fish or seafood on any dish or special. The Vegetariersbond's Lekker Vega Gold listing confirms the kitchen exceeds the label's vegetarian requirement because everything served is vegan. Press coverage describes it as Tilburg's first and only fully plant-based restaurant.

Community funding through crowdfunding 2019 and presale 2026; founder presented concept at Milieucafé Tilburg; no ongoing social programme documented.

Two community funding rounds are documented: a 2019 crowdfunding campaign that raised over €75,000 from local backers, and a 2026 presale campaign that reached €28,969 from 220 supporters.

Both show a reciprocal relationship with the local community. The founder presented the concept at Milieucafé Tilburg, a local environmental forum, in March 2019, and describes building the business together with a team that shares its values.

Entirely plant-based, vegan menu; independently verified by Vegetariersbond Lekker Vega Gold; vegetables carry every dish, never served as sides.

The entire menu is plant-based and vegan, confirmed independently by the Vegetariersbond's Lekker Vega Gold listing, which notes the restaurant exceeds the label's 50% plant-based threshold. Press coverage and Tilburg listings describe it as the city's first and only fully plant-based restaurant, open since 2019.

Vegetables carry the dishes rather than appearing as sides: oyster mushroom bitterballen, cauliflower, celeriac purée with fried oyster mushrooms, risotto and panko croquettes, with composition set by seasonal produce and surplus streams.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
This place
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
