The delicious details

De Heikamp sits where the Ruurlo woods meet open farmland, in a farmhouse restaurant built around one dish. The kitchen grows its own wheat on the land beside the building and has it milled into whole grain flour at korenmolen De Leeuw, and the eggs come from the neighbouring farm.

Pancakes carry the menu, sweet and savoury, with soups, open sandwiches, salads and plates of meat and fish alongside. Children have their own pancake list, and a seasonal card changes through the year.

The dining room opens onto a ground level terrace at the forest edge. A maze, walking and cycling routes and an outdoor play area sit next door, so families, walkers and cyclists fill much of the room.

Menu
What's on the table, and what's left off

Pancakes, sweet and savoury, are the central item on an à la carte menu, alongside soups, open sandwiches, salads and plates of meat and fish. A seasonal card brings in produce as it comes into season. The batter is made from whole grain flour milled from the restaurant's own wheat at a traditional grain mill. Vegetarian, vegan, gluten-free and lactose-free versions are available.

Pancakes carry the menu, sweet and savoury, with a children's list and a seasonal card that brings in produce as it comes round, pumpkin and cinnamon in autumn. Around them sit soups, open sandwiches, carpaccio, salads, bowls and plates of meat and fish.

The batter is made with whole grain flour milled from the restaurant's own wheat at a traditional grain mill, which keeps the bran and the germ of the grain in the dish rather than sieving them out, and the kitchen points to the fibre, vitamins and minerals that come with it. Bread, krentenwegge and seasonal baking are made from the same flour.

Vegetarian dishes run through the card and vegan pancakes are marked on the menu. Gluten free and lactose free versions are available, and the kitchen states that it works with wheat throughout, so traces cannot be ruled out.

Whole grain flour is the kitchen's default for its central product. The restaurant's own grain is milled traditionally into volkoren meel at korenmolen De Leeuw, and the restaurant states that this preserves taste, structure and nutritional value, naming fibre, vitamins and minerals as what whole grain keeps that sieved flour loses.

How this restaurant rates
2 - Engaged

De Heikamp has confirmed practice in two areas of responsible cooking.

The first is sourcing. Wheat for the pancakes is grown on the restaurant's own land next to the building and milled into whole grain flour at korenmolen De Leeuw, and the eggs come from the neighbouring farm, so the two main ingredients of the house dish are traceable back to the field they came from. Regional press covering the Achterhoek grain harvest records the same short chain. The second is seasonal cooking: a seasonal card runs alongside the fixed menu and is rebuilt through the year, with autumn dishes built on pumpkin, and the seasonal baking follows the same rhythm.

De Heikamp is listed by Dutch Cuisine and by Slow Food Nederland.

The restaurant frames its grain supply chain as a short food chain that reduces transport and waste. The kitchen uses whole grain flour rather than sieved white flour, which keeps the bran and the germ of the grain in the dish, more of each harvest goes into the food.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
This place
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
