The delicious details

Rozey opened on the Wijnhaven in 2019 as the first restaurant in the Netherlands to put unlimited vegetarian and vegan dining behind a single fixed price. Co-owner Roos Rutjes, vegan since her twenties, built the opening menu of more than 50 dishes over six months.

The whole card is vegetarian and roughly four in five dishes are fully plant based, so vegetables, legumes, jackfruit and seaweed carry the cooking rather than sitting beside it. Guests order two dishes a round with a side, and keep going for as long as they like.

Drinks are part of the price, which sets the pacing at the table rather than on the bill. The dining room sits on the harbour edge with a waterside terrace in warm weather, and children have a rate of their own.

Menu
What's on the table, and what's left off

Every dish on the card is vegetarian, with roughly four in five fully plant-based. Around 50 small plates range from carrot and coconut soup to beet tartare, seaweed bitterballen, pulled jackfruit and fried cauliflower, drawing on Asian, Dutch and Italian traditions. Guests order two dishes at a time with a side, and keep going for as long as they like. Drinks are included in the fixed price.

Every dish on the card is vegetarian, and the vegan ones carry their own marker, so a plant based table can order freely across all four courses. Around 50 small plates run from carrot and coconut soup to beet tartare, seaweed bitterballen, pulled jackfruit and fried cauliflower.

The cooking borrows widely. Gyoza and sushi rolls sit beside pizza, focaccia and empanadas, while Dutch bar snacks such as bitterballen and the mushroom croquette sandwich hold their own place. Desserts run to chocolate brownie, pastel de nata and pistachio ice cream.

Allergen cards are kept for both the lunch and the dinner menu. The drinks list runs from draft beer and prosecco through to wines without alcohol.

Every dish at Rozey is vegetarian and roughly four in five are fully plant based, with vegetables, legumes, jackfruit and seaweed at the centre of the cooking rather than around it. No meat, poultry, fish or seafood is served.

The Nederlandse Vegetariërsbond has awarded Rozey its LEKKER VEGA Gold seal, the highest of the three tiers it issues, which asks for a fully vegetarian menu with at least half of the dishes plant based.

Named suppliers include Van Gelder for fruit and vegetables, Bastiaansen for organic cheese, Brouwerij De Leckere for organic beer, Smit & Dorlas for coffee and Terra Vites for wine, sourced through central group purchasing.

Suppliers include Van Gelder for fruit and vegetables, a South Holland wholesaler based in Ridderkerk; Bastiaansen for organic cheese; Brouwerij De Leckere for organic beer; Smit & Dorlas for organic coffee; and Terra Vites for natural wine. These are wholesalers, roasters and brewers operating at national level, with purchasing centralised through the group's own wholesale operation in Waddinxveen, and Sligro also named as a distributor.

Rutjes describes asking suppliers for the most responsible products in their assortment, naming kelp and Dutch beetroot as sourcing examples. The franchise profile presents the format as largely plant-based and organic. Local and organic sourcing is positioned as a core value of the kitchen.

Every dish is vegetarian with no meat, poultry, fish or seafood; the Nederlandse Vegetariërsbond independently confirms this through its LEKKER VEGA Gold seal.

The restaurant's menu is fully vegetarian with no meat, poultry, fish or seafood served anywhere on the card, in the sides, or on the dessert list. Items that might appear to be seafood are plant-based by design: the seaweed bitterballen and vegan coquille use plant ingredients only.

The Nederlandse Vegetariërsbond independently confirms this composition through its LEKKER VEGA Gold seal, the top tier of which requires a fully vegetarian menu with at least half the dishes plant-based. Since meat, poultry, fish and seafood are absent entirely, this dimension does not apply to the kitchen.

Rutjes presents the all-inclusive model as a guest-fairness choice that foregoes the beverage margin normally carried by hospitality profit, and the franchise profile asks franchisees to commit to socially conscious operation with personal presence in their restaurants.

Rutjes attributes the format's success partly to franchisees being personally present in their restaurants and to a community that has supported Rozey from the start. The franchise profile asks franchisees to commit to socially conscious operation.

The all-inclusive pricing model deliberately foregoes the beverage margin that normally carries hospitality profit. Rutjes frames this as a choice for guest fairness rather than as a social programme. Social themes appear in the brand's positioning as core values.

Every dish is vegetarian with roughly 80 per cent vegan across more than 50 dishes, confirmed by the Nederlandse Vegetariërsbond's LEKKER VEGA Gold seal, with vegetables, legumes and plant proteins driving dishes across every course.

The restaurant's menu states that every dish is vegetarian and marks vegan dishes individually. The operator describes the card as 100 per cent vegetarian and roughly 80 per cent vegan across more than 50 dishes. Dishes are built on vegetables, legumes and plant proteins across every course: carrot and coconut soup, cauliflower soup, vegetable carpaccios, beet tartare, roasted aubergine, green asparagus, pulled jackfruit, seaweed bitterballen and fried cauliflower. Animal protein is limited to dairy and egg.

The Nederlandse Vegetariërsbond independently confirms this composition through its LEKKER VEGA Gold seal, the top of its three tiers, which requires a fully vegetarian menu with at least half the dishes plant-based; Rozey exceeds that bar. Since its 2019 opening as the first unlimited vegetarian and vegan format in the Netherlands, it has been described as a vegetarian and vegan destination by editorial coverage, the Vegetariërsbond and the franchise profile.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
This place
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
