The delicious details

Bandito Espresso started in 2010 as a mobile cart with a vintage Faema machine at the Maastricht market, opened its first bar at the Faculty of Arts and Social Sciences in 2011, and has run the Randwyck corner on the Brightlands campus since 2012. The bar works almost entirely with organic and fair trade goods, and the whole counter is meat free.

The espresso is an own blend of Arabica beans, delivered freshly roasted each week by a local roaster and ground to order. Shots are pulled on a Faema E61, milk is steamed by hand, and beans are sold whole to take home.

The food list is short and made in house: a daily soup built around as many vegetables as it will hold, hummus, salads, cookies and the carrot cake the bar is best known for. Seating spreads across the campus hall and outside under the trees, with newspapers and magazines to hand.

Menu
What's on the table, and what's left off

A small espresso bar with a meat-free counter built around organic and fair trade principles. The menu changes daily: a fresh soup built around vegetables, hummus, salads, home-made carrot cake, cookies, and baguettes. Soya milk is offered as an alternative for the coffee.

The counter is meat free. A fresh soup is made every day, packed with vegetables and suitable for vegan guests and for people avoiding gluten or dairy.

Around it sit hummus baguettes, salads, cookies and carrot cake, with soya milk available for the coffee. The bar states that almost all of what it sells is certified organic, and the espresso blend is Arabica, part of it fair trade.

2 - Engaged

Bandito Espresso has confirmed practice in two areas of responsible cooking.

The counter carries no meat, poultry or fish at all, so nothing served here draws on animal sourcing. Vegetables, pulses and grains carry the food instead, from the daily soup to the hummus and the salads, and the bar states that almost everything it sells is certified organic.

On waste and packaging, guests staying in are served in porcelain, and take away coffee goes into compostable cups. The bar also makes its own organic syrups, including a saffron one, after finding no organic version to buy in, and sells its beans whole to take home.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
This place
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
