The delicious details

Bandito Espresso started in 2010 as a mobile cart at Maastricht's weekly market and moved into the Faculty of Arts and Social Sciences a year later. Four owners still run it with a small team of baristas.

The city centre bar is hidden inside the faculty, with no entrance from the street: you walk in and follow the signs to a garden overgrown with wild oregano and grape vines, where the outdoor seats are. Espresso is pulled to order on manually operated vintage machines and the milk is steamed and poured by hand.

The house blend is roasted fresh each week with a local roaster and is 100% organic and 60% fair trade. The food counter is vegetarian: soup made fresh every morning around as many vegetables as it will hold, hummus, salads, and carrot cake and cookies baked in house.

Menu
What's on the table, and what's left off

A fully vegetarian counter in a hidden faculty garden. Fresh daily soup is built around as many vegetables as possible, alongside salads, hummus baguettes, and carrot cake and cookies baked in house. The kitchen explicitly aims to serve the healthiest food in town through scratch preparation and whole vegetables. Soy milk is available for coffee.

The counter is vegetarian throughout. Soup is made fresh every morning and built around as many vegetables as the pot will hold, alongside hummus baguettes, salads, and carrot cake and cookies baked in house.

The daily soup is vegan and, the restaurant says, friendly to gluten intolerance, and soy milk is on hand for the coffee.

Health is a stated aim here rather than a side effect: the kitchen sets out to serve the healthiest food in town and works from whole vegetables chopped on the premises each morning. Cakes, cookies, hummus and even the coffee syrups, saffron among them, are made from scratch rather than bought in.

Plant-forward menu

House espresso blend roasted fresh each week by a local roaster, 100% organic and 60% fair trade.

The coffee sourcing centres on a single supplier relationship. The house espresso blend is roasted fresh each week with a local roaster, built from 100% Arabica beans drawn from several origins worldwide, and described as 100% organic and 60% fair trade.

No roaster, farm, grower, baker or food wholesaler is named on the restaurant's own channels or in any third party coverage found, so no supplier is traceable beyond the local roaster relationship.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
This place
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.
