The delicious details

PIT works to a single idea: one surprise menu of three to six courses, rewritten every few weeks so the kitchen cooks what the season is actually giving. Vegetables lead each plate, with fish and meat in support.

Eltjo Scheepers and Jolande van den Meerendonk took over the restaurant on the Raadhuisplein in 2016 and relaunched it as PIT in 2019. Quality, craft and service are the three things the team names as its own measure.

Produce comes largely from the surrounding Brabant countryside: asparagus from a grower in Cromvoirt, herbs, vegetables and edible flowers from the gardens of De Groene Muts, bread from a mill bakery in Den Dungen. Cooking to a set menu also holds the waste down, because what is bought is what is served.

Menu
What's on the table, and what's left off

The kitchen serves only a surprise menu of three to six courses, refined roughly every three to four weeks to follow what is in season. Vegetables lead each plate, with fish and meat in supporting roles. Dietary requirements and vegan menus are accommodated when booked in advance; a vegan menu needs about a week's notice.

There is no card to order from. The kitchen sends out one surprise menu and guests choose how many courses to take, with matching wines or a non alcoholic pairing by the glass.

Vegetables set the direction of most dishes and animal proteins take the supporting part, so the menu moves with the season rather than holding a fixed line up. Dietary requirements, vegan menus included, are cooked into the menu when they are given at booking, and a vegan menu asks for about a week's notice.

How this restaurant rates
4 - Recognised

PIT works with named producers from the surrounding Brabant villages: asparagus from Verhoeven in Cromvoirt, herbs, vegetables and edible flowers from the gardens of De Groene Muts, bread from Den Dungense Molenbakker, cheese from Het Kaasatelier, and a whisky from neighbouring Loosbroek on the drinks list. The kitchen works only with produce in season and rewrites its single menu every few weeks, so what reaches the table follows the harvest rather than a fixed card.

That set menu is also the kitchen's main approach to waste: because every cover eats the same courses and dietary needs are agreed at booking, buying matches what is actually cooked, and the kitchen works nose to tail with the animals it does use. On the employment side, PIT is an accredited training company for four professional cook and hospitality qualifications and takes on placements from those programmes. The restaurant has signed the Dutch Cuisine charter, the Dutch industry code built around produce in season, regional sourcing and a vegetable led plate, and the kitchen is a member of Euro-Toques Nederland.

Named local suppliers include bread from Den Dungense Molenbakker, asparagus from Verhoeven in Cromvoirt, herbs and vegetables from De Groene Muts, cheese from Het Kaasatelier, and Bus Whisky from Loosbroek, all within roughly 20 km of the restaurant.

Local and regional sourcing is the kitchen's stated principle, corroborated by the 2026 Gault&Millau entry. Named suppliers include asparagus from Verhoeven in Cromvoirt, herbs, vegetables and edible flowers from De Groene Muts, bread from Den Dungense Molenbakker, cheese from Het Kaasatelier (Joost van Nijnatten), and Bus Whisky from Loosbroek, all within roughly 20 km of the restaurant, in surrounding Brabant villages.

The named producers list, documented in the Euro-Toques member profile (April 2023), is corroborated by current restaurant pages and the 2026 Gault&Millau entry.

The menu is rewritten every three to four weeks to follow produce in season; the 2026 Gault&Millau entry and Lekker's 2025 review corroborate the seasonal approach in practice.

The kitchen serves only a surprise menu built around produce in season, rewritten every three to four weeks to match what is available at harvest. The kitchen states this as its guiding principle (seizoensproducten), and the approach is corroborated by the 2026 Gault&Millau entry and Lekker's 2025 review, which names winter produce such as a Thai curry of root vegetables and a sauerkraut dessert.

The set menu format ensures purchasing matches what is cooked, and the kitchen works nose to tail with the animals it uses.

The single menu format is the kitchen's main waste reduction mechanism: because every cover eats the same courses and dietary needs are agreed at booking, purchasing is matched precisely to what will be cooked. The kitchen states this directly (daardoor kunnen wij ook onze verspilling heel erg beperken, we can limit our waste greatly thereby).

The Euro-Toques member profile (April 2023) records the kitchen working nose to tail (van kop tot staart), using every part of the animals it buys.

Fish and meat play supporting roles to vegetables; cheese comes from Het Kaasatelier (Joost van Nijnatten), a producer in the surrounding Brabant region.

Fish and meat are deliberately secondary to vegetables in the menu. The restaurant describes the products as local; cheese comes from Het Kaasatelier (Joost van Nijnatten) in the surrounding Brabant region.

PIT is an SBB-registered accredited training company for four professional cook and hospitality qualifications, with a currently open placement for a self-employed cook.

PIT is an accredited training company registered with the SBB (the Dutch training register, registration 100436680). The restaurant is recognised for four professional qualifications: kok (level 2), zelfstandig werkend kok (level 3), and gespecialiseerd kok (level 4), all recognised on 9 December 2016; and zelfstandig medewerker hospitality (level 3), recognised on 7 July 2021.

The register shows a placement currently open for a zelfstandig werkend kok, meaning the training commitment is active rather than historic.

Vegetables lead each plate, with fish and meat in supporting roles; the kitchen names aubergine, sweet potato, corn and mushroom as the basis of recent dishes and has signed the Dutch Cuisine charter, which centres a vegetable forward plate.

The kitchen explicitly positions vegetables as the leading role (groenten spelen de hoofdrol), with fish and meat in supporting roles. This is corroborated by the 2026 Gault&Millau entry, which names vegetables as the main focus, and by the Dutch Cuisine charter, which the kitchen has signed, the charter's principles centre a vegetable forward plate.

The Euro-Toques member profile (April 2023) documents several vegetable-led dishes built on aubergine, sweet potato, corn and mushroom. Vegan menus are available and require about a week's notice to allow the kitchen to build them into the surprise menu.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
This place
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
