The delicious details

Restaurant de Basiliek fills the former Sint Nicolaaskerk in the centre of Appingedam, where stained glass and the old timber roof set the room. The Beukema brothers opened it in 2018 and chef Willem Bos cooks to the Dutch Cuisine principles: regional, seasonal, lighter on meat.

The larder stays close to home. Dairy comes from Appingedam, fruit and vegetables from the organic farm Eikemaheert at Loppersum, beef from Groninger Blaarkop cattle, pork from farms at Holwierde, game from local hunters and fish from the Wadden Sea. A KOPA charcoal oven grills, smokes and roasts meat, fish and vegetables alike.

Bread, brioche, soups and sorbets are made in the kitchen. A five course vegetable menu runs beside the à la carte, and lunch stretches from sandwiches to the chef's menu.

Menu
What's on the table, and what's left off

Lunch ranges from sandwiches and croquettes to a chef's menu; dinner builds around a charcoal oven that grills, smokes and roasts meat, fish and vegetables alike. A complete five-course plant-based menu runs under the Dutch Cuisine name. The kitchen works to the principle of more vegetables and less meat or fish on the plate.

Lunch runs from sandwiches, croquettes and chicken satay to a three or four course chef's menu. Dinner is built around the charcoal oven: coquilles with sea vegetables, dry aged entrecote, pigeon with beetroot preparations, and a fish of the day.

Vegetables are given their own billing rather than a supporting role. A full five course vegetable menu runs under the Dutch Cuisine name, with beetroot rouleau, barbecued leek, roasted cauliflower and mushroom risotto, while vegetarian starters and mains sit on the regular card. Lactose free and gluten free requests are taken at booking.

The kitchen works to the Dutch Cuisine principle of eating well and healthily from what the season offers, with more vegetables and less meat or fish on the plate. Dishes are built from whole ingredients: bread, brioche, soups, sorbets and the small friandises are made in the kitchen rather than bought in.

Vouched

Health is a stated principle: the restaurant cooks to Dutch Cuisine's four principles, of which healthy is one, and the chef states the aim of making healthy and tasty dishes with more vegetables and less meat or fish. Bread, brioche, soups, sorbets and friandises are made in the kitchen, sourdough bread is baked in house, foams and sauces are made rather than bought as commercial bases, and produce comes from named regional growers including a certified organic farm. Fermented radish appears on the lunch card.

The kitchen's larder stays close to home. Dairy comes from a producer in Appingedam, fruit and vegetables from Eikemaheert at Loppersum, a Skal and EKO certified organic farm, beef from Groninger Blaarkop cattle, pork from farms at Holwierde, game from hunters in the area and fish from the Wadden Sea. Several of these producers are named on the current menu.

The menu follows the seasons. The chef's card changes through the year, fish is taken as a catch of the day and game appears when its season comes round, so the dishes reflect what the region offers at any given time.

Restaurant de Basiliek is listed by Dutch Cuisine, whose principles the kitchen cooks to, and is a member of Euro-Toques Nederland, whose code of honour commits kitchens to traceable, regional and seasonal products. Chef Willem Bos and his team won the Euro-Toques Restaurantprijs in 2025.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
Endorsed Meaningful practice across three or more dimensions.
This place
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
