The delicious details

Omelegg opened on Ferdinand Bolstraat in 2013 as the first place in the Netherlands to build a whole kitchen around the omelette. Brothers Nima and Faraz Ghorbani still run it, and the reason they give for starting is a plain one: they wanted Amsterdam hospitality to feel warmer than they had found it.

Eggs are cracked when the order comes in, then whisked, poured and filled on the spot, with no cream or milk added to the mix. The room is casual and cosy, the kitchen open to the counter, and the doors are open from early morning until the kitchen closes at half past three.

Behind that counter the operation runs unusually tight. Stock is ordered daily rather than weekly, and the kitchen works to a zero waste rule that reaches as far as folding bread crusts back into new dishes.

Menu
What's on the table, and what's left off

Almost the whole menu is omelettes, filled to order with vegetables, cheese, meat and fish. Vegetarian and vegan versions are available, and scrambled eggs in a croissant run alongside. Gluten free bread can replace the wholewheat slice that comes as standard.

Almost the whole menu is omelettes, filled to order: halloumi with mushrooms, spinach and pesto; smoked salmon with avocado and truffle cheese; bacon, ham and pulled chicken together in one pan. Scrambled eggs stuffed into a croissant run alongside them.

Vegetarians have plenty to choose from across the range, and both the shakshuka and the grilled potatoes can be made vegan. The egg mix itself carries no cream or milk.

A separate allergen list codes all 14 EU allergens against every dish, and gluten free bread can replace the wholewheat slice that comes as standard.

Omelegg has confirmed practice in two areas of responsible practice: what the kitchen does with its waste, and how it treats the people who work in it.

Waste elimination is a working rule rather than an aspiration. Stock is ordered daily instead of weekly on a two bin system that cut storage space by 60 percent and all but ended emergency runs to the supermarket, and leftovers are worked back into the menu down to the bread crusts.

On the staffing side, the efficiency the brothers built into the kitchen was handed back to the team. Full time staff moved to a four day working week, and the time it takes to bring a new kitchen hire up to speed dropped from a month to around a week and a half.

Independent editorial coverage reports a zero waste rule applied to the point that bread crusts are worked back into new dishes to avoid disposal, alongside a move from weekly to daily ordering on a two bin Kanban system that cut storage space by 60 percent and reduced emergency supermarket runs.

Zero waste elimination is a working rule rather than an aspiration in the kitchen at Omelegg. Bread crusts are worked back into new dishes to avoid disposal. Stock is ordered daily instead of weekly on a two bin Kanban system that cut storage space by 60 per cent and all but ended emergency supply runs to the supermarket.

This practice is documented in Planet Lean's December 2025 feature on the kitchen's operations. The zero waste system is shared across Omelegg's locations and is maintained at the original Ferdinand Bolstraat site.

Free range eggs are stated without a certification, and the menu carries bacon, ham, pulled chicken, chorizo, sucuk, pastrami and smoked salmon with no named supplier or welfare standard.

The kitchen uses around 600,000 eggs a year and states that they are free range, a welfare reference without named certification. The menu carries bacon, ham, pulled chicken, chorizo, sucuk, pastrami and smoked salmon, none of which are accompanied by a named supplier, stated origin or welfare standard.

Independent coverage reports that full time staff moved to a four day working week and onboarding for new kitchen staff dropped from a month to one to one and a half weeks, with documented improvements in employee satisfaction and retention.

Efficiency gains in the kitchen have been handed back to the team. Full time staff moved to a four day working week with documented rises in employee satisfaction, and onboarding for new kitchen staff shortened from a month to one to one and a half weeks.

An earlier feature from Planet Lean describes the founders delegating responsibility to staff and retaining an employee they had been close to letting go. This is documented across two independent editorial features from Planet Lean, September 2024 and December 2025.

The menu is structurally built on eggs rather than on plants. Vegetarian dishes make up a meaningful share, including the halloumi omelette, Popeye, banana peanut butter and all four croissants. Vegan is offered as an option on the shakshuka and the grilled potatoes rather than as standing menu items.

The menu is built around eggs, which are the foundation of almost the whole range. Vegetables appear consistently as fillings, mushrooms, spinach, tomato, bell pepper, onion, and vegetarian dishes make up a meaningful share, including the halloumi omelette, Popeye, banana peanut butter, and all four croissants.

Vegan is offered as an option on the shakshuka and the grilled potatoes. The kitchen's own messaging does not position the menu as plant forward, and vegan dishes are not standing items.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
This place
Engaged Credible practice across two dimensions.
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
