The delicious details

Bbrood on the Ms. van Riemsdijkweg is the bakery group's biodynamic flagship, which opened on the NDSM wharf in Amsterdam Noord at the start of 2021. It was set up to be the company's first fully biodynamic shop, built on the idea that better bread begins with healthier soil.

The bakers work with pure sourdough and shape their recipes around the season and the grain harvest, baking daily. Grain is grown on Dutch fields through a local growers' network and milled to a stone-ground wholemeal flour, then raised with long natural fermentation.

Coffee, pastries and lunch are served to eat in or take away, a few steps from the water.

Menu
What's on the table, and what's left off

Nine pure sourdough loaves, wholemeal wheat, wholemeal spelt, spelt with sunflower seed, spelt and barley pumpkin, multigrain, white wheat, corn, and nut and fruit bread, baked daily from stone-ground flour. Long fermentation, no additives. Croissants, pastries, sandwiches and coffee over the counter.

The range is built on pure sourdough: wholemeal wheat, wholemeal spelt, spelt with sunflower seed, a spelt and barley pumpkin loaf, multigrain, white wheat, corn and a nut and fruit bread, most of them listed with organic ingredients. Croissants, pastries, sandwiches and coffee are sold over the same counter.

Health sits in the method rather than in a claim on the board. The dough ferments for two days, the flour is stone milled so the wheat germ stays in, and the bread is made without additives or preservatives.

Sourdough cultures, dough and pastries are the bakery's own work, shaped by hand and baked on a stone floor.

Long fermentation, 48 hours, and stone-ground milling preserve the wheat germ and natural structure. The bakery uses its own sourdough cultures with no added E numbers or unnecessary preservatives. Wholemeal wheat and wholemeal spelt loaves are daily items in the range.

The grain behind the loaves is grown on Dutch soil by biodynamic growers in Groningen, among them Piet van Zanten, and stone milled in Friesland. Heritage varieties such as Ommelander wheat and Sint Jans rye are grown for the bakery, with a direct line from field to mill to bakery rather than through an anonymous flour trade.

Bbrood has run bakeries in East Africa since opening in Kampala in 2011 and now works in Uganda, Rwanda and Kenya, training bakers and buying ingredients from farmers near each bakery.

Bbrood bakes from Dutch grain grown by biodynamic growers in Groningen and milled in Friesland, with heritage varieties like Ommelander wheat and Sint Jans rye grown directly for the bakery.

Bbrood bakes from Dutch grain grown on biodynamic farms in Groningen. Piet van Zanten and other growers in the region cultivate heritage varieties like Ommelander wheat and Sint Jans rye specifically for the bakery.

The grain is stone-milled in Friesland, and flows directly from field to mill to bakery rather than through a commercial flour trade. The company states this direct line began with the idea that better bread starts with healthier soil.

The bakery states it bakes seasonally with ingredients available through the year, though a documented rotation is not published.

Bbrood describes shaping its recipes around the season and the grain harvest, baking daily. The company states it uses seasonal ingredients from nearby.

The published bread range reads as a standing assortment of nine loaves. No archived menu, dated special, or documented quarterly or monthly rotation was found, so the seasonal practice is self-declared rather than independently verified.

The company uses environmental language on its own website, describing an effort to reduce its ecological footprint and work towards a healthier cycle with better care for soil life and biodiversity.

Specific waste-reduction practices do exist elsewhere in the company, a waste-no-more shop on the Rozengracht selling day-old bread at half price, and a circular bakery at NDSM with a zero-waste goal, but are not documented as practices at this shop location.

Bbrood has run bakeries in East Africa since opening in Kampala in 2011 and now works in Uganda, Rwanda and Kenya, training bakers and buying from local farmers.

Bbrood operates bakeries in East Africa, in Kampala, Uganda (since 2011), and now across Jinja (Uganda), Kigali (Rwanda) and Nairobi (Kenya).

The company states it trains bakers in each location, invests in the surrounding communities and buys ingredients from farmers near each bakery, extending the direct-sourcing model from its Dutch origins into sustained social commitment.

Strongest sourceRestaurant submission

The dominant product line is pure sourdough bread with no animal ingredients; croissants, pastries, cheese items and sandwiches are also sold.

Nine pure sourdough loaves dominate the range, wholemeal wheat, wholemeal spelt, spelt with sunflower seed, spelt and barley pumpkin, multigrain, white wheat, corn, and nut and fruit bread, all composed of flours with no animal ingredients.

Croissants, pastries, sandwiches and toasties are also sold over the counter. The kitchen publishes no plant-forward positioning, and vegetables are not a structural menu element, so the choice is vegetarian rather than plant-centred.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into an impact score from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
This place
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Scores of four or five require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
