The delicious details

Witte Berken sits at the edge of the Veluwe, part of a nature hotel that invites guests to spend time outdoors and to eat what the surrounding forest and farmland provide. The kitchen builds its dishes around short chain Dutch produce, cooking with game from the Veluwe alongside Dutch beef, pork and chicken and fish from responsible sources. Menus follow the seasons, changing month to month as the year turns.

The English style dining room looks onto a garden, and in warmer months guests eat on the patio in the open air. Around a third of the dishes are vegetarian, with a wide range of fruit and vegetables running through the menu, and the kitchen is mindful of sugar, salt and fat and steers away from refined products.

Menu
What's on the table, and what's left off

The menu leans on Dutch and regional produce, with game from the Veluwe in season, Dutch beef, pork and chicken, and fish described as responsibly sourced or farmed. Vegetables and fruit feature widely, roughly a third of the dishes are vegetarian, vegan options are available, and dietary requirements are accommodated on request. The kitchen is mindful of sugar, salt and fat, working with fresh, short chain ingredients and steering away from refined products.

3 - Endorsed

The kitchen has confirmed responsible practice across three areas of its work.

Its cooking follows the seasons, with menus that change through the year and a focus on Dutch produce at its natural time. On waste and resources, the establishment keeps packaging to a minimum, serves a packaging free breakfast, uses biodegradable cups for its UTZ certified coffee, and invests in reducing water and energy use. It also supports its people, running as a certified BOL and BBL training company that offers places to young people learning the trade.

These efforts are recognised by a Green Key Gold certification for the nature hotel and restaurant's environmental management, and by membership of Dutch Cuisine, whose charter centres on local, seasonal Dutch cooking.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into a planet rating from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
Endorsed Meaningful practice across three or more dimensions.
This place
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Ratings of four or five planets require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.
