The delicious details

Trevi's is Amsterdam's first entirely vegan Italian restaurant, set on Pijnackerstraat in De Pijp. Owner Salah Ait, who grew up in Treviso and has been vegetarian his entire life, built the interior by hand and runs the kitchen with a personal touch.

The dining room seats just six tables, split across two evening sittings, with lunch service from Friday to Sunday. Flour is imported from Italy and the pizza dough proves for 72 hours, while the parmesan and pesto are made in house from scratch using cashews and fresh herbs.

The restaurant opened in early 2020 as a two month pop-up and has stayed open since, drawing a loyal neighbourhood following. No alcohol is served.

The kitchen's primary area of confirmed practice is its entirely plant based approach to Italian cooking. Every dish is built from plant based ingredients, with no meat, fish, dairy or eggs served. Traditional dairy components are replaced with cashew based parmesan and house made pesto, and the kitchen works without any animal derived inputs across all courses.

In-house preparation is a confirmed practice: the restaurant makes its own cashew based parmesan, pesto, 72-hour pizza dough, pasta and focaccia from scratch.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into a planet rating from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
This place
Engaged Credible practice across two dimensions.
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Ratings of four or five planets require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.
