The delicious details

't Nonnetje occupies a monumental fisherman's house on the historic Vischmarkt in Harderwijk, where it has operated since 1998 under patron Robert-Jan Nijland. Chef Michel van der Kroft, who joined the kitchen in 2006, holds the SVH Meesterkok title and grounds his cooking in classical French technique shaped by his wife Maria do Ceu's Portuguese roots from the Dao region.

Two parallel menus define the experience: the chef's tasting menu, built around preparations like foie gras and smoked eel terrine with 25-year balsamic, carabineiro with bacalhau and chorizo oil, and house-baked pasteis de nata; and Menu Botanica, an up to seven-course vegetable menu recognised by the We're Smart Green Guide. Gault & Millau awarded van der Kroft Artisan of the Year 2024 and rates the restaurant 18 out of 20.

Sommelier Edger Groeneveld, an SVH Wijnmeester, oversees the wine programme. Pastry chef Claude Dinge runs the pastry section, producing the daily Pao de Michel sourdough spelt bread. Forty-five covers.

Two parallel tasting experiences: the Meesterkok Menu showcases classical French cooking with Portuguese inflections (foie gras, eel, carabineiro, tournedos Rossini), while Menu Botanica offers up to seven courses of vegetable-focused cooking at comparable prices. 't Nonnetje's most visible sustainability commitment lies in sustainable seafood. Chef van der Kroft was named inaugural Paling Patron in 2018 by DUPAN (Duurzame Palingsector Nederland), and the restaurant exclusively uses ESF-certified (Eel Stewardship Fund) eel, supporting glass eel replenishment and adult eel migration programmes across Dutch waters. The We're Smart Green Guide lists the restaurant for Menu Botanica, recognising its seven-course vegetable offering as a substantial plant-forward track.

Named suppliers include PUURgroenten for specialist vegetables, edible flowers, and herbs (confirmed on PUURgroenten's own partner page); Slow Escargot for artisan snails; Schmidt Zeevis for fresh fish; and Vanilla Venture for oils and vinegars. The chef conducts quarterly facility visits to maintain personal connections with his supply chain. Seasonal orientation is reflected in menu notes that dishes may vary with market availability and in the use of Portuguese sun-ripened fruits in season.

Multiple named suppliers—PUURgroenten, Slow Escargot, Schmidt Zeevis, Vanilla Venture—verified by independent sources; chef conducts quarterly facility visits.

Multiple named suppliers confirmed via independent verification. PUURgroenten (specialist vegetables, edible flowers, herbs, microgreens) is listed as a partner on the supplier's own website. Slow Escargot provides artisan snails; Schmidt Zeevis supplies fresh fish; Vanilla Venture provides oils and vinegars. Chef van der Kroft conducts quarterly facility visits to maintain personal supplier relationships.

The sourcing reflects significant Portuguese sourcing (carabineiro, chorizo, Serra da Estrela cheese, olive oil) alongside local suppliers, shaped by the chef's wife Maria do Ceu's Portuguese roots from the Dao region. This culinary heritage defines both the ingredient selection and the menu identity.

Seasonal cooking confirmed across multiple independent sources; Portuguese sun-ripened fruits used in season, Menu Botanica features seasonal vegetables.

Seasonal cooking is confirmed across multiple independent sources. Gault & Millau emphasises the chef's 'puurheid van het product' (purity of the product) with focus on ingredient quality. The restaurant's own menu notes that 'market availability may affect pricing/dishes,' indicating supply-driven seasonal variation.

Portuguese sun-ripened fruits are used in season, explicitly contrasted with unripe Dutch imports in the Rungis interview. Menu Botanica features seasonally appropriate vegetables—asparagus, artichoke, kohlrabi—reflecting the rhythm of the vegetable garden.

ESF-certified eel from glass eel replenishment and eel migration programmes; inaugural Paling Patron 2018.

Chef van der Kroft holds a meaningful sustainability credential for animal products: ESF-certified (Eel Stewardship Fund) eel. He was named the inaugural Paling Patron in 2018 by DUPAN (Duurzame Palingsector Nederland), a recognition of the restaurant's support for glass eel replenishment and adult eel migration programmes across Dutch waters.

The ESF certification is confirmed independently by Misset Horeca and DUPAN. The credential reflects genuine commitment to sustainable eel fishing, a key conservation practice in Dutch waters.

The restaurant offers Menu Botanica, a dedicated vegetarian tasting menu of up to seven courses (EUR 132.50 to 182.50) running in parallel with the chef's signature menu at comparable pricing and ambition. How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into a planet rating from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
This place
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Ratings of four or five planets require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
