The delicious details

Stera sits on Lange Vesting, on the western fringe of Brugge's old town in Sint-Andries. Founder Olivier opened the door in 2022 after years of running a teenage plant webshop, and the current corner room is a hybrid of three things: a houseplant shop, a coffee counter and a small back garden.

The phrase the founder uses for what happens here is biophilia, his shorthand for people, plants and coffee under one roof. The room is plant filled and quiet. Dogs are welcome, the garden offers outdoor seating, and on weekdays the indoor space doubles as a relaxed workspace.

Menu
What's on the table, and what's left off

The menu is a pastry counter rather than a kitchen. Cakes, muffins and other small bakes are supplied by an outside vegan bakery, and on most visits every item on the counter is plant based; the regular exception is a small batch of pancakes containing eggs. Coffee, tea and chai are the centre of the drinks list. Coffee is roasted in Brugge by Dees Coffee Roasters, and oat milk is poured as the default plant milk in any espresso drink, with cow's milk available on request.

How this restaurant rates
2 - Engaged

Stera has confirmed practice across three areas: local and regional sourcing, low waste and circular operation, and plant-forward cooking.

On local sourcing, the coffee programme is roasted in Brugge by Dees Coffee Roasters, a named local supplier; the wider supply picture is positioned around local growers. On low waste and circular practice, the operation composts its waste, ships plant webshop orders in recycled cardboard and returns plant pots to its growers; delivery emissions from webshop orders are offset through carbon removal partners Heirloom, Remora and Charm.

On plant-forward cooking, the pastry counter is almost entirely plant based, with oat milk poured as the default in the coffee programme. Independent vegan press in Brugge has covered the venue consistently on this basis.

Coffee roasted locally by Dees Coffee Roasters in Brugge.

Coffee is roasted in Brugge by Dees Coffee Roasters, a named, traceable local supplier within the same city. This is documented on Stera's own plant bar page and corroborated by independent Brugge food bloggers.

The wider supply picture is positioned around local and healthy products according to independent coverage, though other suppliers for food and drink are not named publicly.

All waste is composted, webshop orders ship in recycled cardboard, plant pots return to growers, and shipping emissions are offset through named carbon-removal partners.

All waste is composted. The plant webshop ships orders in recycled cardboard rather than plastic, and plant pots are returned to growers for reuse.

Stera names three carbon-removal partners — Heirloom, Remora, Charm — to offset shipping emissions for webshop orders.

Pastries are almost entirely vegan, with oat milk as the default for espresso; animal products are optional rather than structural.

The food offering is structurally plant based by design. Bruges Vegan confirms all pastries are vegan except for occasional pancakes, and independent coverage rates the venue as vegan-friendly with multiple plant milks available — oat milk is the default for espresso drinks.

Stera's positioning emphasises plant-forward dining. The founder has deliberately shifted from fully vegan to plant-based-with-alternatives to broaden reach; animal products (occasional egg pancakes, dairy milk on request) are minimal and optional rather than structural to the kitchen.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into a planet rating from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
This place
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Ratings of four or five planets require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
