The delicious details

Set in a restored 1880 farmhouse on the border of Utrecht and Leidsche Rijn, RoodNoot opened in May 2022 as a craft brewery, restaurant and event space. The three founders, all from mental health services backgrounds, designed the venture so that craft and care could sit side by side.

A partnership with WIJ 3.0 places people with psychiatric vulnerability into supervised roles in the kitchen, brewery and front of house, with around half of working hours filled by participants and a stated ambition to grow that share. Each participant works with a workplace coach and follows an individual development pathway.

The former cattle stalls now form the dining room, the old hay loft houses the brewery, and a large terrace looks out over the brewing kettles. A kitchen garden supplies fresh produce to the cooks.

Menu
What's on the table, and what's left off

Straightforward pub fare designed to pair with house-brewed beers—soups, sandwiches and salads at lunch, then starters of carpaccio and burrata moving into beefsteak, ribs, satay, fish and burgers. Vegan options include a burger and croquette. Fresh produce comes from the on-site kitchen garden and kogelbiefstuk from a farmer-butcher in Meerkerk.

A daily soup rotation and the kitchen garden suggest seasonal alignment.

A daily soup-of-the-day rotation and the use of an on-site kitchen garden imply seasonal alignment for fresh produce. The rest of the visible menu is standard pub fare with no seasonal framing or rotating chef's menu documented.

A formal WIJ 3.0 partnership places people with psychiatric vulnerability into supervised roles; approximately half the working hours are filled by participants, with an ambition to reach 60–70%.

RoodNoot is structured as a social enterprise built around employment for people with psychiatric vulnerability and others at distance from the labour market. All three founders (Wil Verhoeven, Fardusa Essa, Thom van de Pol) come from mental health services backgrounds.

Each participant works under a WIJ 3.0 workplace coach and follows an individual development pathway with potential progression to expanded tasks, training or paid employment. The structure, named partner and workforce share are corroborated across multiple independent sources.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into a planet rating from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
This place
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Ratings of four or five planets require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
