Sagardi brings the cooking of the Basque Country to a canal-side building that runs between the Spui and the Singel. Founded in Barcelona in 1996 by brothers Iñaki and Mikel López de Viñaspre, it is the first Sagardi in the Netherlands and works from the recipes of their grandmother.

At its heart is a coal grill built on decades of Basque grill craft, with an adjoining cellar where the beef is dry-aged. A pintxo bar at the front offers a selection that changes with the season, and the dining rooms open onto terraces on the Spuistraat and over the Singel canal.
