The delicious details

Lebkov & Sons began in Leiden in 2002 with a simple aim: a genuinely homemade alternative to fast food. The Rotterdam branch sits in the landmark Groot Handelsgebouw beside Centraal Station, a high-ceilinged space of wood and tile where sandwiches, soups and salads are made and finished in view of the counter.

The kitchen builds its food from scratch, from hummus and pesto to egg and tuna salad, and works directly with named producers: organic cheese from Biokaas Kinderdijk, high-welfare pork from Livar, biodynamic milk from Kalverliefde and organic eggs from a Barneveld farmer. Bread is a three-ingredient sourdough of flour, water and salt, and the coffee is organic, roasted each week with Moto.

It draws a steady flow of commuters, students and nearby office workers from early morning, with free Wi-Fi and an easy counter-service rhythm.

Lebkov & Sons works directly with named producers across its key ingredient categories: organic cheese from Biokaas Kinderdijk in South Holland, pork from Livar and eggs from a Barneveld farmer. Deliveries are consolidated to reduce road journeys, cups are plant-based and compostable, plastic is recycled rPET only, and guests are encouraged to bring their own cup. Meat and dairy meet 3-star Beter Leven or organic welfare standards, the milk is biodynamic, and the tuna is ASC-certified. The animal welfare charity Wakker Dier has recognised the brand as one of the few Dutch hospitality names sourcing humane and traceable ingredients.

Plant-forward menu

Named direct suppliers across several categories, including Biokaas Kinderdijk (organic cheese) and Livar (pork), with most ingredients sourced nationally within the Netherlands.

Multiple named, traceable producers are cited with direct relationships: Biokaas Kinderdijk (organic cheese, South Holland), Livar (pork, Limburg), a Barneveld egg farmer (Gelderland). Coffee and tuna are imported. This represents strong direct and national sourcing. Suppliers are independently verifiable named entities.

Consolidated deliveries, plant-based compostable cups, recycled rPET plastic, reusable-cup incentive, and claimed 75% waste reduction.

Deliveries are consolidated to one or two times weekly; claimed reductions of 75% food waste and 85% transport. Cups are 100% plant-based compostable bagasse, plastic is recycled rPET, and reusable cups are incentivised. Coffee energy efficiency comes through the Moto partnership. Practices are concrete but largely self-declared.

All meat and dairy meet 3-star Beter Leven or organic welfare standards. Named suppliers include Livar (pork, 8-year partnership), Biokaas Kinderdijk (organic cheese), Kalverliefde (biodynamic milk), and FishTales (ASC-certified tuna). Animal-welfare charity Wakker Dier recognises the brand. Certifications are self-asserted rather than independently verified through certifier registries.

Fair compensation through direct-trade relationships with suppliers and farmers; staff positioned as a desirable workplace, though no formal programme is documented.

The brand references fair compensation for organic farmers and coffee pickers through direct-trade relationships. It positions itself as a good place for staff ('Lebkov-ers', a mix of students and professionals). No named social organisation, community programme or explicit employment standard is documented online.

Vegetarian and vegan menu sections marked; salads and soups feature vegetables; plant-based milks available. Meat and fish remain substantive on the sandwich-led menu.

Dedicated vegetarian and vegan menu sections are marked with symbols. Soups and salads feature vegetables, and plant-based milks are freely available. The sandwich-led menu centres substantially on meat, fish and egg fillings, so plants are a meaningful part but not the structural foundation.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into a planet rating from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
Endorsed Meaningful practice across three or more dimensions.
This place
Recognised Strong practice across four or more dimensions, with independent corroboration.
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Ratings of four or five planets require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
