Herberg de Fazant sits in the heart of the Drentsche Aa nature reserve in Oudemolen, where owner Bas Blikman turned his mother's village inn into a seasonal tasting menu restaurant. The kitchen builds a five, six or seven course menu that changes continuously with what the season offers, opening each meal with appetisers, an amuse and house baked bread.

Herbs and fruit come from the restaurant's own garden and greenhouse, and small producers around the region supply the rest, with guests told where each product comes from. Kitchen waste is composted back into that same garden, closing the loop.

Five rooms let guests stay overnight, and a full vegetarian version of the tasting menu runs alongside the regular one.
