Gys has run an all organic kitchen in the centre of Utrecht since 2014, with a menu that is entirely vegetarian and almost wholly plant based. The whole kitchen is gluten free and inspected by the Dutch coeliac association, so guests with dietary needs can order across the menu.

Everything is made in house, from cakes and desserts to sauces, and the menu shifts through the year with the vegetables and fruit in season. Much of the produce arrives directly from the organic farm Boerderij Landzicht, while a Utrecht maker brings fresh organic fries by bicycle each morning.

The setting is relaxed and cafe like, with a terrace for warmer days, and the founding idea is to make organic eating affordable and open to everyone.

The menu is built around vegetables and legumes, with dishes such as a plant-based version of the Dutch kapsalon and a vegan shakshuka. Almost every dish is vegan, the single exception being one vegetarian lunch plate, and the whole kitchen is gluten free with dishes clearly marked for guests who need them. The team makes its cakes, desserts and sauces in house rather than buying them ready made.
