The delicious details

De Groene Afslag is a proeftuin, a testing ground for plant based cooking, set inside a former military school in the Goois Nature Reserve near Bussum. The restaurant sits within a larger circular complex that includes a hotel, workspaces and a school for change, all designed by Thomas Rau and Sanne Oomen.

The kitchen works exclusively with plant based ingredients, sourced from local farmers and growers rather than through wholesale channels. Dishes arrive at the table as they are ready, designed for sharing rather than formal courses. The space itself adds to the experience: stairs salvaged from Bailey bridge sections, an acoustic ceiling pressed from retired banknotes and art installations throughout.

How this restaurant rates
4 - Recognised

De Groene Afslag shows strong and independently validated practice across four areas of responsible cooking.

The menu follows seasonal availability, rotating regularly to reflect what local producers and the on site garden can offer. Circular practices run through the entire operation: rejected fruit is repurposed into soft drinks, and the building is constructed almost entirely from reclaimed materials, a commitment recognised with the German Design Award 2025. Social impact is part of the operating model through De AltijdWerkplaats, which provides employment for status holders, people with physical or mental health challenges and those re-entering the workforce. The bi-weekly organic market with Slow Food Amsterdam extends the community role. The restaurant is fully plant based by design, with vegetables, legumes and grains at the centre of every dish.

De Groene Afslag holds B Corp certification (since 2024, overall score 87.1) and the LEKKER VEGA Keurmerk Gold.

Menu rotates with seasonal availability, evidenced by dated PDF menus and third-party corroboration.

The restaurant describes cooking with what nature currently offers as a founding principle. Dated PDF menus on the restaurant's website (March 2026 lunch and dinner, Winter 2025 drinks) provide evidence of regular rotation aligned to seasonal availability.

Multiple third-party listings (RestauPlant, HappyCow) corroborate the seasonal focus. The labelling of drinks menus as 'Winter 2025' further supports structural seasonality across the menu.

Reclaimed materials throughout the building (German Design Award 2025); rejected fruit repurposed into soft drinks.

The restaurant operates within a circular complex featuring extensive reclaimed materials in the building structure (Bailey bridge stairs, hospital fixtures, Ocean Cleanup plastic for ceilings, retired banknotes). The kitchen demonstrates food waste reduction through repurposing rejected fruit into soft drinks. B Corp certification independently validates environmental commitment across the restaurant's operations.

De AltijdWerkplaats employment programme; De Veranderschool training; bi-weekly Slow Food market; steward-owned governance.

De AltijdWerkplaats provides structured employment for status holders, people with physical or mental health challenges, school dropouts and pensioners. De Veranderschool trains 1,250+ people annually on alternative economic models.

The restaurant organises a bi-weekly organic market with Slow Food Amsterdam and operates under steward-owned governance with three independent foundations. B Corp certification independently validates these employment and community practices.

How we score
The My Treats impact scale

Every restaurant is assessed against SEERO, our six-dimension sustainability framework — covering sourcing, seasonality, waste, animal products, social impact, and plant-forward cooking. Each finding is weighted by how strongly it is corroborated. The combined result is translated into a planet rating from 1 to 5.

The five levels

SEERO is an acronym for Starting, Engaged, Endorsed, Recognised, Outstanding:

Starting First verified signals of sustainable practice.
Engaged Credible practice across two dimensions.
Endorsed Meaningful practice across three or more dimensions.
Recognised Strong practice across four or more dimensions, with independent corroboration.
This place
Outstanding Top-tier practice, confirmed by recognised third-party audit.

How a level is reached. Each level needs two things together: a minimum number of dimensions covered, and a minimum overall strength of evidence across them. A dimension only counts once its evidence is specific and substantiated — a passing mention doesn't qualify. Meeting only one of the two keeps a restaurant a level lower.

Ratings of four or five planets require human validation and, at the top tier, an external audit. Scores are based on publicly available evidence and restaurant submissions at the time of assessment.

How evidence is weighted
Self-declared Stated by the restaurant on its website, menu or in a submission. Plausible, but not yet independently corroborated.
Researched Found through independent research; one credible third-party source backs the claim.
Vouched Corroborated across more than one independent source. Some gaps may remain.
Audited Fully corroborated across independent sources or by a recognised third-party certification.
What the sourcing checkmarks mean
✓ Full check — independently verified: corroborated across more than one source, or audited / third-party certified (vouched or audited).
✓ Light check — self-declared or from a single source. Not yet independently verified.
